    Antonio has created a true masterpiece, in which the sparkling notes and acid tips of the berries emerge powerfully from a sweet and crunchy base provided by the maize kernels and cocoa gruè.

    This dish is a continuous surprise at every testing, with an exciting and intense combination of flavours wrapped in the softness of the Alpine butter and the starches of the carnaroli.

    The aesthetic rendering of this risotto is reminiscent of a painting by the legendary artist Jackson Pollock and will literally leave your guests speechless.

    Wine: Pandemonio Spumante Brut Rosè Hic et Nunc – 2020

    Winner of important international awards, Pandemonio is one of the most challenging bets of the Hic et Nunc winery. Produced using the Martinotti-Charmat method, this sparkling wine has a brilliant pink colour with violet reflections; the perlage is fine and persistent. On the nose, hints of berries, fresh fruit and spices stand out. In the mouth, the fruity note prevails, with marked freshness and acidity, minerality and sapidity.
